Pizza Sauce

This oven-roasted method enhances flavors naturally and gives a delicious, smoky depth to your pizza sauce! Spread it on wraps, bread, ragi pizza and it makes for a quick evening snack or dinner. You can also add it to pasta.


Recipe

INGREDIENTS

5-6 large ripe tomatoes (halved)

4-5 garlic cloves (with skin)

1 small onion (quartered, optional)

1 tbsp olive oil

1 tsp dried oregano

1 tsp dried basil (or a few fresh basil leaves)

½ tsp black pepper powder

½ tsp red chili flakes (adjust to taste)

½ tsp salt (or as needed)


METHOD

Pre heat your oven to 200°C (400°F). Prepare the Tomatoes: Place halved tomatoes, garlic cloves (with skin), and onion (if using) on a baking tray. Drizzle with olive oil and sprinkle with salt. Roast: Bake for 30-35 minutes until tomatoes are soft, slightly charred, and caramelized. Peel Garlic: Let everything cool slightly, then squeeze out the roasted garlic from its skin. Transfer the roasted tomatoes, garlic, and onion to a blender. Add oregano, basil, black pepper, chili flakes, Blend until smooth (or keep it slightly chunky if preferred). Let the sauce cool, then store it in an airtight container in the fridge for up to a week or freeze for longer use.
